Scallops have a sweet, uniquely rich taste. Before cooking, their meat is shiny, creamy white, or ivory and they should be firm to the touch. After cooking they turn more opaque. Scallops are sorted by the number of pieces to the pound. So the smaller the number, the larger the scallops. Our “New Bedford Dry” scallops have a moisture content that won’t exceed 83%. That means they have not been over-soaked with water and and they have not had their flavor diluted. Scallops are easy to prepare and can be used in a variety of dishes.
