Description

The Hackleback Sturgeon is indigenous to the Great Lakes and Mississippi River systems. A relatively small sturgeon, it produces a small egg with a rich, nutty finish. This is great caviar to incorporate into dishes, as it has a smaller, less delicate bead. Hackleback caviar has a deep dark-brown to black hue.
